Volume-to-volume and mass-to-mass conversions use fixed unit definitions. Crossing from volume to mass requires an ingredient density.
Ingredient densities are practical estimates. Measuring technique, packing, grind, moisture, and temperature can change the actual mass. A kitchen scale is more reliable for precision baking.

Which cup size is used?
